Hello, using Skybox successfully with my Quest and Airscreen. But my Wifi can't handle bigger Files without buffering. Is there a possibility to connect the Quest to my Mac with the USB cable and then stream Videos to the Skybox App using USB instead of Wifi?

I don't think so, unfortunately. Oculus Link requires special software on the computer to grab and compress the VR frames and send them to the headset. Unfortunately there is no official Oculus software for Mac anymore.
I don't know if you've found your solution yet, but if not you should probably consider upgrading your Wi-Fi router. I postponed doing that myself, thinking it would not make a huge difference (I was using a reliable-but-kinda-slow AirPort Extreme N) but damn dit it make one. I upgraded to a TP-Link AX6000 (which was a great choice in retrospect as the Oculus Quest 2 supports Wi-Fi 6) and it's much faster and has so far been reliable.
Upgrading your router also unlocks low-latency streaming with Virtual Desktop for wireless PCVR (looking forward to trying that on the Quest 2) which is a nice bonus. Plus Virtual Desktop has announced macOS support recently, which should be interesting to try. There is no need for official Oculus software on the Mac this way, as Virtual Desktop simply captures the desktop and streams it wirelessly to the headset using its own protocol.

Oh and you might also want to try creating a Windows VM with VMware Fusion Player 12 (which is now completely free for personal use, grab a license here: https://my.vmware.com/group/vmware/evalcenter?p=fusion-player-personal). You may be able to connect the Oculus USB to the VM and direct-stream this way. Works for all USB devices I've tried but whether it works for Oculus Link is unclear as maybe that uses more advanced USB features. Depends on how well VMware Fusion supports USB 3.X. Version 12 is supposed to be much better on that front.
It definitely wouldn't work for games, but for streaming videos it possibly might work well without requiring you to boot into Windows, while allowing you to stream wired or wireless.
