When I use Virtual desktop and my media player I have the option to add a sharpening video filter, it helps a lot with image clarity/quality.
Would it be possible to have this option implemented (a slider in video settings to choose the intensity)?

SKYBOX v1.1.7(beta) added Sharpness option in Global Settings.
You can follow the steps to switch to beta channel and try it out.

I've seen sharpening before in vr apps for media playback and it's terrible so I don't think that its worth it here. Unless it can be done differently like its done on a 4K TV for instance
